We often get asked about quarters, halves and wholes. What the break down is? How much meat to expect?

We average a 600 pound hanging weight. So quarter is 150 pounds, half 300pounds and whole is 600. You pay that price on the rail. You then lose 30-35% to boning and trimming. Meaning your take home is approx 100 pounds on the 1/4, 200 pounds on the half and 400 pounds on the whole.


The normal breakdown is 25% steaks, 25% roasts and 50% burger.
